Abstract One of the stages processing green bananas into flour is drying process. The kinetics this process needs to be studied as a step in optimizing and improving performance. This study aimed assess various models that could explain banana slices specify parameters slices. house effect (GHE) solar dryer was used for drying. data were fitted (Page, Newton, Henderson Pabis, Verma, Logarithmic). coefficient determination (COD), root square mean errors (RSME), Chi-square (χ 2 ) models’ validity. In GHE dryer, upper tray’s temperature higher than lower tray’s. Logarithmic model best reflects among evaluated models. range effective moisture diffusivity 1.190 x 10 −10 - 1.673 m s −1 .
